Macadamia White Chocolate Shortbread Recipe

Add a few ingredients to macadamia nuts and white chocolate and you have delicious shortbread bar cookies. The food processor makes quick work of these cookies, but you may also make them using a pastry blender.

Prep Time: 10 minutes

Cook Time: 40 minutes

Ingredients:

  • 4 (1-ounce) squares white baking chocolate
  • 4 ounces macadamia nuts
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 cup (2 sticks) unsalted butter, at room temperature, 1 cut into 16 pieces

Preparation:

Position an oven rack in lower third of oven. Heat oven to 325 degrees F.

Coarsely chop 4 squares (1 ounce each) white baking chocolate and 4 ounces macadamia nuts. Reserve.

Place flour and sugar in a food processor. Whirl 5 seconds. Scatter butter pieces over mixture. Whirl until dough forms a ball, 1 to 2 minutes. (Or in a medium-size bowl, cut in butter with a pastry blender or fingertips.) Remove to a bowl. Mix in chocolate and nuts. Press into an 11 x 7 x 2-inch baking pan. Score into 24 pieces.

Bake in lower third of heated 325-degree F. oven 40 minutes. Cool pans on wire racks 5 minutes. Cut through scored marks. Cool cookies completely before removing from pan.

Yield: 24 pieces
