The flavor of this rich homemade cranberry sauce is enhanced with walnuts, maple syrup, and Zinfandel wine. You'll want to double this recipe. May be made in advance and refrigerated.

Prep Time: 5 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 (12 ounces) package fresh cranberries, washed and picked over
  • 1 cup maple syrup
  • 1/2 cup cranberry-raspberry juice
  • 1/2 cup fruity red Zinfandel wine
  • Grated zest of 1 orange
  • 1 cup walnut halves, coarsely chopped

Preparation:

Place cranberries, maple syrup, juice, wine, and orange zest in a heavy saucepan. Bring to a boil, reduce heat to medium, and cook for 10 minutes, until cranberries begin to pop. Skim off any foam that rises to the top.

Remove from heat and gently smash a bit to open the cranberries, but do not mash. Stir in walnuts. Cool to room temperature, then refrigerate until ready to serve.

You'll probably want to double this delicious cranberry sauce recipe. May be made up to a week in advance and kept refrigerated.

Yield: about 4 cups
