Orange Tarragon Mayonnaise Recipe

This is a great way to add a punch of flavor to prepared mayonnaise. Use as a condiment for fish or chicken or use as a salad dressing.

Prep Time: 3 minutes

Cook Time: 20 minutes

Ingredients:

  • 2 cups fresh orange juice
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 teaspoons chopped fresh tarragon, or 3/4 teaspoon dried
  • Salt, to taste

Preparation:

Place the orange juice in a small heavy saucepan over medium heat. Cook, swirling the pan, until the juice is reduced to a thick syrup, about 20 minutes. You should have about 3 tablespoons.

Combine the orange syrup, mayonnaise, sour cream, tarragon, and salt in a bowl. Cover and refrigerate for at least 2 hours before use.

Yield: about 6 servings

"I like to make grilled island style or teriyaki chicken kabobs and use this as a dipping sauce. Sweet and tangy! I have also used it with oj mixed with pineapple which is also very good."
