Ingredients:
- 2 cups cider vinegar
- 1/2 cup coarse sea salt
- 4 cups light brown sugar
- 6 cups water
- 1 teaspoon five spice powder
- 1 Tablespoon red food coloring, optional
- 3 large green mangoes, peeled and cut into 1-inch chunks
Preparation:
Place vinegar, sea salt, brown sugar, water, five spice powder, and red food coloring in a heavy saucepan. Bring to a boil and stir until sugar has completely dissolved. Cool to room temperature.
Place mangoes into glass canning jars and cover with the cooled syrup. Seal and process according to your canner's directions.
Store spiced green mango pickles in a cool dark place and use within 6 months. Refrigerate after opening and use opened jars within 2 weeks.
