Kiwifruit Jam Recipe

Kiwifruit makes a tasty jam. This batch is made with pectin and pineapple juice. It's fast, easy, and great for kitchen gifts.

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients:

  • 3 cups peeled and chopped kiwifruit
  • 1 cup unsweetened pineapple juice
  • 1 packet pectin
  • 4 cups sugar

Preparation:

Combine kiwifruit, pineapple juice, and pectin in a large saucepan. Bring to a boil, stirring constantly. Add sugar, stirring until dissolved. Return to a rolling boil. Boil 1 minute, stirring constantly. Remove from heat. Skim foam if necessary.

Ladle hot kiwifruit jam into hot jars, leaving 1/4-inch headspace. Adjust two-piece caps. Process 10 minutes in boiling water canner.

Yield: about 4 half-pints
