Emeril's Hot Mayonnaise Recipe

Homemade mayonnaise is very easy to make and this version is hot and spicy. If you are concerned about using the raw egg, purchase irradiated eggs available in most markets.

Prep Time: 5 minutes

Ingredients:

  • 1 large egg
  • 1 teaspoon Dijon mustard
  • 1 Tablespoon hot red pepper sauce (or Tabasco)
  • 2 Tablespoons fresh lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 cup olive oil

Preparation:

In a food processor or blender, combine the egg, mustard, hot sauce, lemon juice, Worcestershire, salt, black, pepper and red pepper flakes. Process until smooth, about 30 seconds. With the motor running, pour in the olive oil in a slow, steady stream. The mixture will thicken. Refrigerate and ready to use.

Yield: 1-1/2 cups

Use with Hot Mayonnaise Glazed Scallops or other meat, poultry or seafood.
