Green Tomato and Apple Chutney Recipe

The tart flavor of green tomatoes mixes with apples and spices makes an intriguing chutney.

Prep Time: 20 minutes

Cook Time: 45 minutes

Total Time: 1 hour, 5 minutes

Ingredients:

  • 2 pounds (1 kg) green tomatoes, chopped
  • 2 pounds (1 kg) tart apples, peeled and chopped
  • 1/2 pound (250 g) onions, chopped
  • 1 pound (500 g) raisins
  • 3-3/4 cups (750 g) light brown sugar
  • 2 teaspoons ground ginger
  • 2 teaspoons black peppercorns, crushed
  • 2 teaspoons quatre-épices (four spices)
  • 2 Tablespoons coarse salt
  • 2 garlic cloves
  • 3 cups (700 ml) wine vinegar

Preparation:

Combine green tomatoes, apples, onions, raisins, brown sugar, ginger, peppercorns, quatre-épices, salt, and garlic in a stainless-steel saucepan. Add 6 Tablespoons of the vinegar and cook over low heat, adding the remaining vinegar gradually as the mixture boils.

Stir as the mixture thickens about 45 minutes.

When thick, transfer chutney to sterilized jars. Seal when cool. Store in a cool, dark place.

Yield: About 8 pounds

The fruit blends beautifully with the spices and vinegar, and would be wonderful on any kind of fried snack or on poultry. I added a small chili pepper to up the heat. My only quibble is that the green tomatoes were kind of overwhelmed. Their distinctive tartness was eclipsed by that of the apples and vinegar. But that could be a good thing if you have a whole lot of green tomatoes and aren't all that fond of them!
