Lemon Sage Chicken Marinade Recipe

The bright flavors of lemon, garlic, and sage transform bland chicken breasts in this simple and fast marinade. Plan on marinating the chicken at least 4 hours before grilling or baking.

Prep Time: 15 minutes

Ingredients:

  • 8 whole garlic cloves
  • 1-1/4 cups olive oil
  • 2 teaspoons kosher salt
  • 1-1/2 teaspoons coarse black pepper
  • Grated zest of 2 lemons (use a microplane)
  • Juice of 2 lemons (about 1/2 cup)
  • 1/2 cup chopped fresh sage leaves
  • 8 (8-ounce) boneless chicken breasts, skin on

Preparation:

Place garlic in a food processor and process to a puree. Add olive oil, salt, and pepper, processing to combine. Add lemon zest, lemon juice, and sage. Pulse a few times until sage is rough-cut.

Spread the mixture on each side of the chicken breasts and place in a container. Cover and marinate at least 4 hours. Let sit on the counter for 15 minutes before grilling or baking.

Yield: 8 servings
