Honey Spiced Cornish Game Hens Recipe

The honey glaze on these game hens is both sweet and spicy for a taste sensation. Try this glaze on small chickens or a large roasting chicken with equal success, but increase the roasting time accordingly.

Prep Time: 10 minutes

Cook Time: 50 minutes

Ingredients:

  • 4 Cornish game hens
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 cup red wine
  • 1/4 cup honey
  • 1 teaspoon ground allspice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground sage
  • Kosher salt and freshly ground black pepper

Preparation:

Preheat oven to 400 F. Line a roasting pan with nonstick foil. Place Cornish game hens in roasting pan, breast-side up.

In a small, heavy saucepan, bring olive oil, balsamic vinegar, red wine, honey, allspice, chili powder, onion powder, and sage to a boil. Reduce heat and simmer for 3 to 5 minutes until thickened, stirring often. Remove from heat and let cool for 10 minutes.

Brush the Cornish game hens with the cooled glaze. Sprinkle liberally with salt and freshly ground black pepper. Roast for 45 to 50 minutes, basting every 10 minutes, until meat thermometer placed between thigh and breast registers 170 F.

Let game hens rest for 10 minutes before serving.

"I cooked Cornish game hens for Christmas dinner & used this recipe - they were absolutely fantastic. I had to omit the salt for my husbands diet, but they were still fantastic. As a note- I cooked up the glaze the day before (and added a couple of cloves of garlic & a handful of fresh cranberry's) Stuck it in the fridge & it was ready to go the next day. The day before, I also chopped up 1 green apple, 2 stocks of celery, 1/2 a red onion, couple cloves of garlic, a handful of cranberry's & some fresh sage - added some lemon juice & used that for stuffing the birds prior to baking - the were very moist and tasty!"
