Orange Ginger Chicken Recipe

A simple sauce made with orange juice, honey, and fresh ginger adds sparkling flavor to the lowly chicken thigh. They are quickly browned in a skillet, then baked to fork tenderness in the oven. Kids love this version. Although thighs are much less expensive, feel free to substitute chicken legs for the thighs or even chicken breasts. If you use chicken breasts, start checking with a meat thermometer after 30 minutes of baking time. The center of the chicken breast should read 165 F. If you over-cook white meat, it can become dry and stringy.

Measure flour, paprika, salt, allspice, and chipotle chile pepper in a plastic bag. Shake to combine. Pour milk into a shallow bowl. Dip each chicken thigh in milk, then shake in the flour mixture. Place on a platter, not touching, and refrigerate for 30 minutes to set coating.

Meanwhile, make the orange ginger sauce. Place orange juice, honey, ginger, Dijon mustard, and soy sauce in a small saucepan. Bring to a boil and cook for 5 minutes to reduce. Remove from heat and let cool.

Preheat oven to 400 F. Line a shallow roasting pan with foil.

Heat a large, heavy skillet over medium-high heat. When skillet is hot, coat the bottom with a thin layer of olive oil. Brown the chicken until golden on both sides, turning only once. Do this in two batches so as not to crowd the chicken.

Place the browned chicken thighs in the prepared roasting pan. Spoon orange ginger sauce evenly over the top. Cover tightly with foil. Bake for 45 minutes, until chicken is tender. Let rest 5 minutes before serving with the pan sauce.

Yield: 8 servings
