As Esme said in the popular Twilight novel, "Bella, we are making Italiano for you." This is an easy version of an Italian-style pasta casserole using ground round beef, noodles, olives, mushrooms, corn, and Cheddar cheese. Try this one for your Twilight party.
Prep Time: 20 minutes
Cook Time: 1 hour, 10 minutes
Total Time: 1 hour, 30 minutes
Yield: 8 servings
Ingredients:
- 3 Tablespoons shortening
- 1 onion, minced
- 1 pound ground round beef
- 1 can (26 ounces) tomato soup
- 1 can (15 ounces) tomato sauce
- 2 cups uncooked broad egg noodles
- 1 cup cold water
- 2 Tablespoons salt
- 2 cups canned corn, drained
- 1 can (6 ounces) ripe pitted olives, drained
- 1 can (4 ounces) mushrooms (pieces and stems preferred), drained
- 1 cup grated Cheddar cheese
Preparation:
Melt shortening in a large pot on medium. Add onions and cook until brown. Next, add ground round beef and cook thoroughly. Add tomato soup, tomato sauce, noodles, water, and salt. Cover and cook over low heat for 10 minutes.
Remove pot from stove and add corn, olives, mushrooms, and part of the Cheddar cheese. Stir and then pour mixture into a baking dish 2 x 8-1/2 x 8-1/2 inches. Cover with remaining cheese, and bake at 350 F. for 50 minutes.
Yield: 8 servings
