Sugar Free Fudge Recipe

Enjoy this fudge on your sugar-free or low carb diet. Even those not on a diet will love this candy. Plan ahead to refrigerate overnight.

Prep Time: 10 minutes

Cook Time: 5 minutes

Ingredients:

  • 16 ounces cream cheese, softened
  • 2 unsweetened chocolate squares (1ounce each) melted and cooled
  • 1/2 cup sugar substitute (aspartame sweetener)
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans

Preparation:

In a small mixing bowl, beat the cream cheese, chocolate, sweetener, and vanilla until smooth. Stir in pecans.

Pour into 8-inch square baking pan lined with foil. Cover and refrigerate overnight. Cut into 16 squares. Serve chilled.

Yield: 16 servings

Per (1-Square) Serving: 147 Cal; 14 g Total Fat; 5 g Carb; 31 mg Cholesterol; 84 mg Sodium; 3 g Protein.

"I heated the cheese past room temp, used powdered cocoa and butter and increased the amount to 1/2 c, increased the vanilla to 2 t, and used 3/4c Splenda, in a food processor and it turned out OK. Still not fudge, but closer."
