Browned Butter Frosting Recipe

Old-fashioned frosting begins with browning the butter in a saucepan. Great on spice cake and molasses cake.

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes


  • 1/2 cup (1 stick) butter or margarine
  • About 4-1/2 cups sifted confectioners' sugar
  • About 5 Tablespoons milk
  • 1-1/2 Tablespoons light corn syrup
  • 1-1/2 teaspoons vanilla extract


Brown butter or margarine untiil golden in a saucepan large enough for mixing frosting. Add sugar alternately with milk, corn syrup, and vanilla extract. Mix well. Spread over cold cake.

Yield: frosting for 2 dozen cupcakes, for an 8-inch, 2-layer cake, or for one 9-inch loaf cake.

Nice recipe, could use better instructions, Member Cadywampus

This turned out creamy, stiff, and a bit lumpy (which was my own fault because I rushed it). It's quite thick, and has the same consistency as cream cheese frosting, without the same taste. I substituted in soy milk and it turned out fine. If you don't know how to brown butter, you should look at instructions for that first. I was not sure if I was supposed to remove the pan from heat completely or not, so I just turned it low while adding the other ingredients. Also, some direction on how long one can store it or re-use possibilities would be nice (i.e., leave at room temperature or refrigerate and reheat). I've left it in the pan for now, because the cake I'm making is still cooking.
