Apples and pecans are the stars of this delicious moist cake. The recipe makes enough for a crowd, so it is perfect for potluck dinners, parties, and family gatherings.

Yield: 30 servings
Ingredients:
- 1 apple, peeled, cored, and diced
- 1 teaspoon baking soda
- 1 cup white sugar
- 1 cup brown sugar
- 1 teaspoon cinnamon
- 2 cups flour
- 1 cup (2 sticks or 16 Tablespoons) butter, melted
- 1 teaspoon vanilla extract
- 2 eggs
- 1 cup Texas pecans, chopped
Preparation:
Sprinkle the baking soda over the apples and set aside.
Thoroughly blend the white sugar, brown sugar, and cinnamon together and add them to the flour. Stir in the butter followed by eggs and vanilla. Combine well. Finally, stir in the apples, and pecans.
Pour into a greased 13- x 9-inch pan and bake at 350 F. for 40 minutes, or until a toothpick comes out clean. Cool cake before cutting.
