Ingredients:
- 1 cup fresh or frozen broccoli florets
- 3/4 cup sliced fresh button mushrooms
- 1/4 cup diced red bell pepper
- 2 green onions, sliced thin
- 1 Tablespoon butter
- 1 cup diced cooked ham
- 8 large eggs
- 1/4 cup water
- 1/4 cup Dijon mustard
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/8 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1-1/2 cups (6 ounces) shredded Cheddar cheese
Preparation:
Preheat oven to 375 F. Grease a shallow 1-1/2-quart casserole dish.Saute broccoli, mushrooms, red bell peppers, and green onions in the butter until cooked, but not mushy. Remove from heat and stir in ham. Let cool slightly.
In a large bowl, whisk together eggs, water, Dijon mustard, oregano, basil, garlic powder, and salt until well-combined. Stir in sauted vegetables and Cheddar cheese.
Pour into prepared casserole dish and bake for about 25 minutes, until center is done.
