Perfect for breakfast, lunch, brunch, or even dinner, this savory bread pudding goes together fast and is packed with flavor. Using eggs, bread, and cheese as a base also makes it relatively inexpensive. Feel free to experiment with other breads and/or cheeses. The strata may also be baked in a rectangular glass baking dish rather than pie plates.

Yield: 8 servings
Ingredients:
- 7 (3/4-inch-thick) ciabatta bread slices
- 5 large eggs
- 1/2 cup whipping cream
- 1/2 cup half-and-half
- 1/2 cup refrigerated pre-chopped onion (see Notes)
- 1 (8-oz.) package shredded Mexican four-cheese blend
- 1/2 (8-oz.) package shredded Monterey Jack cheese
- 1 (4.5-oz.) can chopped green chiles, drained
- 1 (2-oz.) jar diced pimiento, drained
Preparation:
Preheat oven to 425 F. Tear bread into bite-size pieces to equal 6 cups, firmly packed.
Combine eggs, cream, half-and-half, onion, Mexican cheese, Monterey Jack cheese, chiles, and pimiento in a large bowl. Gently stir in bread. Pour bread mixture into lightly greased 9-inch deep dish pie plates.
Bake at 425 F. for 20 to 22 minutes or until browned and set. Serve immediately.
Yield: 8 servings
