Baked Onions and Beef Recipe

This smothered beef pot roast recipe gets its start from onions and gravy mix. It uses only 5 simple ingredients. It will require up to 2 hours of cooking time, so plan ahead.

Prep Time: 10 minutes

Cook Time: 2 hours

Ingredients:

  • 1 package brown gravy mix
  • 2 cups cold water
  • 1/2 cup red wine (may substitute additional water or beef broth)
  • 4 large onions, sliced thin
  • 1 beef pot roast, 1-1/2 to 2 inches thick (about 2 to 3 pounds)

Preparation:

Preheat oven to 350 F.

Whisk together gravy mix, water, and wine.

Place onions in a 9 x 13-inch glass baking dish. Cover with half of the gravy liquid. Top with beef pot roast. Pour 1/2 cup of remaining gravy liquid over the roast. Cover with foil and bake for 1-1/2 to 2 hours, pouring more of the gravy liquid over the roast each half hour.

Let rest for 15 minutes. Remove meat and slice. Serve pot roast topped with onions and gravy. Serve with bread to sop up all the juices.

Yield: 4 to 6 servings
