Vegetables with Peanut Sauce Recipe - Petjel Recipe

Cabbage, green beans, and spinach are cooked with a peanut butter, garlic, and brown sugar sauce. The peanut butter adds a delicious touch of vegetable protein to the green vegetables.

Prep Time: 15 minutes

Cook Time: 30 minutes

Ingredients:

  • 3 Tablespoons peanut butter
  • 1-1/2 cups water
  • 1 garlic clove, minced
  • 1 Tablespoon brown sugar
  • 1/4 teaspoon cayenne pepper
  • 1 Tablespoon lemon juice
  • Salt to taste
  • 1 cup sliced cabbage
  • 1 cup diced green beans
  • 1 pound spinach, cleaned and trimmed
  • 1 cup bean sprouts

Preparation:

Combine the peanut butter, water, garlic, brown sugar, cayenne, and lemon juice in a saucepan. Bring to a boil, reduce heat and simmer for 2 minutes. Add salt and cool.

Boil the cabbage and beans in salted water to cover for 20 minutes. Add the spinach and simmer for 5 minutes. Add the bean sprouts and cook, stirring, for 1 minute. Drain.

Place vegetables on a large serving dish. Top with the sauce and serve immediately.

Yield: 6 servings
