With the leaves removed, fennel bulbs can be stored for 7 to 10 days in a plastic bag in the refrigerator. Cooked and pureed fennel can be frozen for 10 to 12 months at 0 degrees F., when sealed in an airtight container with 1/2 inch headspace. Fennel seeds add a subtle touch of licorice to recipes. Even those who don't care for a licorice flavor will enjoy fennel seed.
