Broiled Swordfish Steaks with Soy and Ginger Recipe

From The New Settlement Cookbook edited by Charles Pierce (Simon & Schuster), for About.com

Soy sauce, fresh ginger, and sesame oil flavor broiled swordfish steaks in this simple and quick recipe. Plan ahead to marinate for 2 to 3 hours before cooking. Tuna may be substituted for swordfish.

Prep Time: 10 minutes

Cook Time: 5 minutes

Ingredients:

  • 1/4 cup dark soy sauce
  • 1 Tablespoon finely chopped fresh ginger
  • 1 Tablespoon sesame oil
  • 4 swordfish steaks, 1/2 inch thick, about 6 ounces each

Preparation:

Combine soy sauce, ginger, and sesame oil in a flat dish large enough to hold the swordfish in an even layer. Add the fish steaks and cover. Marinate for 1 hour at room temperature or 2 to 3 hours in the refrigerator, turning occasionally.

Just before serving time, preheat broiler. Broil about 4 inches from the heat source until firm and opaque, about 2-1/2 minutes on each side, basting several times with the marinade.

Serve at once garnished with fresh dill, parsley, or watercress.

Makes 4 to 6 servings
