If you arrived here via a search engine, don't miss my full feature on Parsnips which includes history, selection, storage, and usage tips. The parsnip looks like a white, overgrown carrot. It is sweet with a texture like a sweet potato and can be eaten raw or cooked. They are wonderful in soups and stews as well as roasted or mashed like potatoes. Choose small or medium parsnips rather than the large ones. The bigger ones have a woody, bitter center.
