Hi, everyone! I have a five month old and am starting to make baby food for him. I had planned on starting with carrots, but was told that homemade "carrots" have dangerous nitrates...anyone know anything about this? Also, when I processed them in the food processor, I couldn't get them as smooth as I noticed the commercial baby carrots were. Is it still ok to feed him these, or did I do something wrong? Can anyone recommend a really good book on homemade baby food so I know how to and which foods I can use? Aaagh! So many questions! Thanks!!! ~amber~

Seems to be a bit of conflicting information about nitrates in carrots, Amber, but overall it looks like there's no need to worry. Here's what I found:
