How to Toast or Color Coconut Recipe

From The New Doubleday Cookbook by Jean Anderson and Elaine Hanna (Doubleday)

Toasting coconut gives an added flavor dimension. It is surprisingly simple to color your own coconut at home.

INGREDIENTS:

  • Shredded coconut
  • Food coloring

PREPARATION:

To Toast Grated Coconut:
Spread coconut out in an ungreased shallow baking pan and toast, uncovered, stirring often, 30 to 40 minutes at 300 degrees F. until golden.

Microwave Method:
Spread 1 cup flaked coconut in a flameproof glass piepan or paper plate; microwave, uncovered, at HIGH power 2 minutes; stir and microwave 3 to 4 minutes longer, stirring every minute, until evenly golden.

To Color Grated Coconut:
Dip a toothpick in food color, stir through coconut, then rub with your fingers to distribute. Repeat until color is the intensity you want.
