Gorgonzola Cheese Recipes

Gorgonzola is an Italian cheese named for a town near Milan, Italy. Gorgonzola is made of cow's milk and is streaked with blue lines, as are classic French bleu cheeses. It is an aged cheese and can get quite pungent and smelly when over-aged. It melts beautifully and is great crumbled over salads and vegetables. Gorgonzola can often be substituted in recipes calling for blue cheese.
