The Swiss and French superior versions of Emmental cheese are made from partially skimmed unpasteurized cow's milk which may make them difficult to find in the United States. However, you can find comparable versions made from pasteurized milk in the US, Austria, and Germany. Like generic Swiss cheese, the cheese is a creamy beige with large holes.
