Miso Marinade Recipe

Miso soybean paste, brown sugar, and wine make a flavorful marinade for broiled or baked fish or poultry.

Prep Time: 5 minutes

Cook Time: 20 minutes

Ingredients:

  • 2 cups white miso (fermented soybean paste available in Oriental markets)
  • 1/2 cup light brown sugar
  • 1/2 cup sake (Japanese rice wine)
  • 1/2 cup mirin (another Japanese rice wine)

Preparation:

Whisk together miso, brown sugar, sake, and mirin in the top of a double-boiler over low heat for about 20 minutes until sugar crystals dissolve and mixture has reduced by almost half. Stir often. Remove marinade from heat, remove top of double-boiler to a trivet, and let cool to room temperature.

Marinate fish or poultry in the mixture in a sealed heavy-duty zip-top bag (squeeze out all the air) at least 2 hours.

Remove fish or poultry from the marinade and bake or broil to desired doneness.

Yield: about 2 cups marinade
