Mashed Potato Chive Bread Recipe

Use mashed potatoes to make this delicious yeast bread. The addition of the chives gives a nice savory flavor. Try adding 1/2 teaspoon of your favorite dried herb for an added boost. The chives may be omitted, if you wish. The bread will still be delicious.

Prep Time: 20 minutes

Cook Time: 35 minutes

Ingredients:

  • 1 cup milk
  • 2 Tablespoons butter
  • 1 Tablespoons sugar
  • 1 teaspoon salt
  • 1 package (1/4 ounce or 2-1/2 tsp) dry yeast
  • 1/4 cup warm water
  • 2 cups mashed or pureed potatoes (about 4 medium-size mealy potatoes)
  • 1 Tablespoon snipped chives
  • 4 to 4-1/2 cups all-purpose flour

Preparation:

Heat milk, butter, sugar, and salt over low heat or in the microwave just until butter melts. Cool to lukewarm. Place in a large mixing bowl.

Combine yeast with water, stirring until dissolved. Mix into milk.

Fold chives into mashed potatoes. Add mashed potatoes and 1 cup of the flour to the milk mixture, beating until smooth.

Begin adding flour until a stiff dough forms. Place dough on a floured surface and knead until smooth and elastic. Add more flour if the dough is too moist. Place dough in a large oiled bowl and cover with a clean linen kitchen towel. Let rise until doubled in size.

Punch down and place on a floured surface. Shape into a loaf and place in a greased 9 x 5-inch loaf pan. Cover with the kitchen towel and let rise until doubled again.

Preheat oven to 375 degrees F. Bake bread for 35 to 45 minutes, until crust is browned.

Yield: 1 loaf
