Ingredients
3/4 cup boiling water
1/2 cup old fashioned oatmeal
3 tbsp margarine
1/4 cup honey
1 tsp salt
1 envelope active dry yeast
1/4 cup very warm water
1/2 tsp sugar
1/2 container of egg substitute (equal to 1 egg)
2 cup all-purpose flour
3/4 cup oat bran cereal, milled to flour in blender
Instructions
Stir together the boiling water, oats, margarine, honey, and salt in a large
bowl until well mixed. Let cool to warm. Sprinkle packet of yeast over the
very warm water in a 1 cup container; add the 1/2 teaspoon sugar. Stir to
dissolve the yeast and let it stand for about 10 minutes or until mixture
bubbles. Next, add the yeast mixture, egg substitute, 1-1/2 cups flour, and
the oat bran to the oatmeal mixture. Beat with an electric mixer at low speed
for 2 minutes while gradually adding the rest of the flour. Put dough into 9
x 5 x 3 inch loaf pan that has been sprayed with no stick cooking spray.
Cover with waxed paper and a towel and put pan in a warm place away from
drafts. (Turned off oven with a pilot is a good place.) Let the dough double
in bulk about 45 minutes. Bake in preheated oven at 375 degrees F. for about 1
hour. The bread is done when it feels and sounds hollow when you tap it.
Remove bread from pan and let cool. This bread is crusty and has a great
flavor, AND is healthy for you!
