John Coffey in Stephen King's popular book and movie, The Green Mile, requested meatloaf for his last dinner. Try this caterer's version.
Prep Time: 15 minutes
Cook Time: 45 minutes
Ingredients:
- 2 large onions, sliced
- Olive oil for sauteing
- Salt and pepper to taste
- 1 pound ground beef (chuck or round) or ostrich
- 1 egg, lightly beaten
- 1 onion, minced
- 3 large cloves garlic, peeled and minced
- 1 large shallot, peeled and minced
- 1/4 cup low fat milk
- 1/2 cup rolled oats
- 3 Tablespoons dry breadcrumbs
- 1/4 cup ketchup
- 1/2 teaspoon thyme
- Salt and freshly ground black pepper to taste
Preparation:
Saute sliced onions in olive oil until golden brown. Season with salt and pepper.Set aside. Preheat oven to 350 degrees F. In bowl mix ground beef, egg, minced onion, garlic, shallot, milk, oats, breadcrumbs, ketchup, thyme, salt, and pepper. Form into four oval patties, about 1 to 1-1/2 inches thick. Over medium heat, brown patties in 12-inch non-stick fry pan, about 2 to 3 minutes on each side.
Place pan in oven. Bake 30 to 35 minutes or until cooked through. Lift out of pan slotted spatula. Top with onions and serve.
Yield: 4 individual servings
