This popular Greek appetizer is made with garbanzo beans and a sesame seed paste called tahini. Lavosh (a cracker bread) or pita bread is traditionally served with the mixture for spreading or dipping.
Prep Time: 10 minutes
Ingredients:
- 1 can (15 ounces) garbanzo beans, drained
- 1/3 cup lemon juice
- 1/4 cup tahini paste
- 3 tablespoons chopped green onion
- 2 tablespoons chopped flat-leaf parsley
- 1/4 teaspoon ground cumin
- 2 garlic cloves, peeled
- Salt and freshly ground black pepper to taste
- Fresh parsley sprigs or cilantro (coriander) for garnish
- Lavosh (cracker bread) or pita bread, quartered
Preparation:
In a food processor, combine the garbanzo beans, lemon juice, tahini (sesame seed paste), onion, parsley, cumin, and garlic. Add salt and pepper to taste and blend until combined.Pour into a serving dish. Cover and refrigerate at least 2 hours for flavors to blend. Before serving, garnish with fresh parsley or cilantro (coriander).
