Sesame Spread Recipe - Tahini, Hummus Recipe

This popular Greek appetizer is made with garbanzo beans and a sesame seed paste called tahini. Lavosh (a cracker bread) or pita bread is traditionally served with the mixture for spreading or dipping.

Prep Time: 10 minutes

Ingredients:

  • 1 can (15 ounces) garbanzo beans, drained
  • 1/3 cup lemon juice
  • 1/4 cup tahini paste
  • 3 tablespoons chopped green onion
  • 2 tablespoons chopped flat-leaf parsley
  • 1/4 teaspoon ground cumin
  • 2 garlic cloves, peeled
  • Salt and freshly ground black pepper to taste
  • Fresh parsley sprigs or cilantro (coriander) for garnish
  • Lavosh (cracker bread) or pita bread, quartered

Preparation:

In a food processor, combine the garbanzo beans, lemon juice, tahini (sesame seed paste), onion, parsley, cumin, and garlic. Add salt and pepper to taste and blend until combined.

Pour into a serving dish. Cover and refrigerate at least 2 hours for flavors to blend. Before serving, garnish with fresh parsley or cilantro (coriander).

Lavosh (a cracker bread) or pita bread is traditionally served for spreading or dipping with the this beloved Greek appetizer, but you might also try it with tortilla chips.

Yield: about 2 cups
