Miso Marinade Recipe

Ingredients
2 cups white miso (see note)
1-1/4 cups granulated sugar
1/2 cup sake
1/2 cup mirin (see note)

Instructions
Combine all ingredients and cook in a double boiler over low heat for 30 minutes. Cool completely. Use as a marinade for baked or broiled fish or chicken. (Allow fish or poultry to marinate at least 2 hours.)

Chefs Craig Miller and Gary Boileau recommend baking or broiling because the sugar content in the marinade will cause the fish or chicken to stick to the grill.

Note: Miso and mirin are available in Oriental markets.

Yield: 2 cups
