Grilled Satay Chicken Wings Recipe

Chicken wings are marinated in a ginger, garlic, lime, cilantro, and tamari mixture, then grilled for a smoky flavor. If you do not have a grill, you can bake these delicious chicken wings in the oven. Plan to marinate at least 2 hours, but preferably overnight.

Prep Time: 15 minutes

Cook Time: 20 minutes

Ingredients:

  • 3 pounds chicken wings (about 15 wings)
  • 2-1/2 Tablespoons vegetable oil
  • 2-1/2 packed Tablespoons chopped cilantro
  • 2 Tablespoons lime juice
  • 2 Tablespoons tamari
  • 3 (1/4-inch-thick) slices peeled ginger root
  • 4 medium cloves garlic, peeled and smashed
  • 2-1/4 teaspoons sugar
  • 1-1/2 teaspoons ground cumin
  • 1 small dry red chile pepper, crumbled, or to taste

Preparation:

Cut each chicken wing at joints to make 3 pieces; discard tips. Combine vegetable oil, cilantro, lime juice, tamari, ginger, garlic, sugar, cumin, and chile pepper to make marinade. Place wings in a nonreactive dish large enough to hold them in 1 layer. Add marinade and turn to coat. Cover and refrigerate at least 2 hours or preferably overnight.

Preheat gas or charcoal grill. Remove wing pieces from marinade and grill 8 to 9 minutes per side until dark brown.

Yield: 30 pieces

Per piece: 65 calories, 64 percent from fat, 5 grams total fat, 5 mg cholesterol, 1 g saturated fat, 5 g protein, .87 g carbohydrates, .08 g total fiber, 102 mg sodium.
