Black-eyed peas are a popular food to welcome in the New Year. Adding them to a spicy, fresh tomato salsa is a fun and different way to get your black-eyed peas. Texas caviar is a Tex-Mex version of the always-welcome salsa. Served with tortilla chips, it's the perfect party appetizer or for munching in front of the TV while watching sports. Best of all, it's even better when you make it in advance and let the flavors meld for a few days. All you have to do is pour it into a bowl at the last minute, open the bag of chips, and away you go! Small pinto beans or black beans may be substituted for the black-eyed peas, if you wish.
