
Shrimp is a popular seafood alternative for Lent, and this recipe does not disappoint. Rice and corn provide the hearty starches, brightened up by perky sun-dried tomatoes. The corn and shrimp are added last so they don't overcook. The pilaf has a satisfying seafood flavor from the clam juice cooking liquid, however, you may substitute vegetable, seafood, fish, or even chicken broth. This colorful dish is not only delicious, but has great eye-appeal. It's simple enough for a quick family dinner, yet elegant enough for company.
