
Moros y Cristianos means Moors and Christians. This is a Cuban dish of black beans and rice, named for the lighter-skinned Christians and the darker-skinned Moors of Europe. It is traditionally eaten on New Year's Day in hopes of good luck for the coming year. This homey, vegetarian dish gets protein from the beans and filling carbohydrates from the rice. My Cubano friends like to spice it up a bit more with added japaleno or Scotch bonnet chile peppers. It's up to you. This recipe works beautifully as a side dish as well as a main entree.
