
Beets (beetroot) seem to be one of those vegetables you either love or hate. The rich maroon flesh of this root vegetable is naturally sweet and nutritious, and the leaves are also edible. Love beets. I am back up to six elders for whom I care; and, they all love beets. I did an informal class for another group this past weekend on making borscht; using Melissa’s precooked, prepeeled little red beets. Perfect for people who no longer have enough dexterity or strength for such work. Good article!
Thanks, John! I love them as well. Those baby beets are delicious, even if they are a bit on the pricey side. My favorite is pickled beets.

Peggy, thanks for your tips on beets! I got beets last week with my CSA farm produce basket and, shamefully, I’ve never bought or cooked beets. I looked around for an easy way to prepare them and came up with something simple yet elegant – roasting the beet roots and braising the greens. My husband loved it.
Beets are also main ingredient in Beet Soup (Borscht).
