Remember, carved pumpkin jack-o'-lanterns are not suitable for food purposes after being lit up and displayed for decoration, but pick up some extra pumpkins during the season to use for cooking.

Why aren’t pumpkins good enough to cook and use after they’ve been used for jack-o-lanterns? I have done this for years making the BEST pumpkin pies and pumpkin nut bread anywhere….I have never had any problem with food poisoning, etc.
Pumpkin begins to slowly decay as soon as it is cut. Once carved, the inside is exposed to bacteria and bugs in the air. Then there is the matter of smoke from the candle inside. Large pumpkins grown for jack-o’-lanterns are often pulpy and woody and not the best for eating.
If it works for you, then go for it, but I can’t recommend it. smiles.
