Pumpkins are a wonderful fall vegetable. Whether you buy one to make a Halloween jack-o'-lantern or to cook up, please do not throw those pumpkin seeds in the trash. Toasted pumpkin seeds make a wonderful snack or garnish, and they are so easy to make. Most people bake them, but they can also be made in the microwave or in a heavy skillet on top of the stove. The kids will love them as much as the adults.

I really love to throw cayenne on them for a bit of spice, or candy them with honey or maple syrup and sprinkle them on pumpkin french toast stuffed with sweetened ricotta.

Thanks for this article, I have never heard of anyone cooking them in the microwave but I think I will give it a try this year
Don’t cook them in the microwave. I did last year and it caught my microwave on fire!
Microwave ovens vary greatly in power. You must watch them closely.
