I love the combination of sweet, tart, and spicy. It really sparks the tastebuds, and this combination of tart cherry preserves mixed with ground chile pepper and other flavors really perks up normally bland chicken. This version is made in the clay cooker and goes together fast. However, if you do not have a clay cooker, I have included instructions for using a Dutch oven or covered roaster. Try this delicious recipe, then experiment with other flavors of fruit preserves. Sugar-free preserves will also work just fine.
