Waxy potatoes are specified because they hold together better than russets or Idahos. Any waxy potato will do, such as Yukon Golds, Red Rose, new potatoes, or fingerlings. The entire recipe is made on the stove-top in about 30 minutes. Kids love these. I could eat the entire batch!
