Minature peanut butter cheesecakes have a bottom crust of chocolate cookie and are stuffed with chocolate chips. These little one-bite wonders are perfect for an appetizer dessert bar or baby showers. You can change-up the recipe by using miniature peanut butter cookies for the crust and peanut butter chips for the filling, but the chocolate and peanut butter combination rated best with taste-testers.
