
I love beets, but I simply adore pickled beets! I can eat them like candy. Beets (also known as beetroot) are loaded with anti-oxidants which can lower cholesterol levels, so they are great for a heart-healthy diet. Luckily, pickled beets are a snap to make at home. My friend from New Zealand says that when you have a hamburger there, you will usually get a big slice of pickled beet instead of a cucumber pickle with it. I’ve tried it and it’s very good.
True that, StevyD! And at restaurants, they are also often served with a fried egg layered on top of the burger. I’ve visited twice and stayed with my Kiwi friends. I adore NZ.
