
Today is National Margarita Day. No, really! This version of Margarita Shrimp is perfect for the occasion. Frozen versions of this Caribbean lime shrimp recipe are available in most markets, but they are pricey. It's easy enough to make at home using a quick lime and tequila marinade. It cooks up fast and makes its own delicious margarita glaze. Citrus-lovers go gaga over this recipe. It may be served as an entree over rice or at room temperature as a party appetizer. Make sure you use orange juice concentrate, not plain orange juice. Fresh limes are also a must. Arriba!
