This isn’t about turkey — but I couldn’t figure out anywhere else to send it. Others don’t seem to have comments sections. So:
When making soup, I’ve always found that wilted vegetables add the best flavor. You can saute them slightly before adding, too. Also, don’t forget to use the carrot greens: They’re highly nutritious.
And mushrooms: Americans like our mushrooms with the underside of the caps closed. But the French like them opened, with the dark stuff exposed. They say it’s more flavorful.
