Toasted Pumpkin Seeds

Pumpkins are a wonderful fall vegetable. Whether you buy one to make a Halloween jack-o'-lantern or to cook up, please do not throw those pumpkin seeds in the trash. Toasted pumpkin seeds make a wonderful snack or garnish, and they are so easy to make. Most people bake them, but they can also be made in the microwave or in a heavy skillet on top of the stove. The kids will love them as much as the adults.

I really love to throw cayenne on them for a bit of spice, or candy them with honey or maple syrup and sprinkle them on pumpkin french toast stuffed with sweetened ricotta.
