Watermelon Muffins Recipe

Watermelon juice and pulp make a moist, plump muffin. The chocolate chips simulate seeds as well as add flavor. You may substitute plumped raisins for the chocolate chips, if you wish. Use the batter to make standard-size muffins or mini-muffins (I like to make half of each size). The adults will love these as much as the kids.
