they actually certify sweet onions, and have a wealth of recipes and sources on their website.
Don’t let anyone fool you, you can walk into your local grocery store and buy ’sweet Vidalia” onions that will have as much sufidic acid in it as a ‘hot’ onion. (growers are growing “Videlia” onions outside of the area in Georgia that has low sulfur soil which is what makes a ’sweet’ onion.
The National Onion labs “certifies” truly sweet onions and not just during Videlia season. jccampb
