Turkey, Leek, Broccoli Pie Recipe

Full of cheese and eggs, along with vegetables and smoked turkey, this quiche recipe is filling enough to satisfy the heartiest appetite. Get the smoked turkey from the supermarket deli counter. Best of all, this casserole may be served warm or at room temperature.

What’s a mandoline and where can I find Hungarian Paprika??? Everyday utensils and ingredients would make this dish more feasible. It sure looks good, though!

A mandoline is a manual slicer that makes very thin slices. Click here to see what they look like. You can also use the large slot on a standard box grater, but watch out for your knuckles! The point is that the potatoes need to be paper thin, and it’s extremely difficult to cut them that thin with a knife.

Hungarian sweet paprika is available in the spice section of all large grocery stores. The most popular brand is Szeged brand. Click here to learn more about paprika.

I cooked this early in the morning and came back to a wonderful lunch at room temperature which was served with fruit.The potato crust was delicious and much lighter than a pastry crust. This is sure to be one of my favorite recipes for many occasions. Thanks Peggy!
