This is an easy way to take inexpensive store-bought dinner rolls and turn them into a delicious bread course suitable for any meal. The purchased rolls are sliced in half and brushed with a compound butter flavored with rosemary, sage, and garlic. They are quickly toasted under the broiler. They taste even better than they look. Feel free to use your favorite herbs.

Cob Loaf Recipe

Americans know this as a spinach dip in a bread bowl. In New Zealand and Australia, it is known as a cob loaf. You can easily vary this recipe by adding chopped ham or bacon, various types of shredded cheeses, and/or your favorite herbs. It is delicious served as a party appetizer, but some folks make a meal of it. If you are not a fan of spinach, it may be omitted, but hollow out less of the loaf. This recipe is best made with 1 large cob loaf, but can be made to stretch to 2 small loaves.

Orange Amaretto Chicken Recipe

Chicken breasts are browned, then baked with an orange amaretto sauce for an elegant, yet easy main dish. Serve with a salad and rice side dish for a complete meal. This is quite easy to make and goes together quickly. I prefer skin-on chicken breasts to keep the white meat from drying out. You may substitute boneless, skinless chicken breasts if you wish. If you use dark chicken pieces, you may need to extend the baking time another 10 to 15 minutes to ensure it is done.

Full of cheese and eggs, along with vegetables and smoked turkey, this quiche recipe is filling enough to satisfy the heartiest appetite. Get the smoked turkey from the supermarket deli counter, or use your own homemade. Best of all, this casserole may be served warm or at room temperature.

Lamb Cacciatore Recipe

Some people refer to this Italian-style lamb as peasant food. If so, the peasants eat like kings! As with traditional cacciatore, the lamb is flavored with sweet onion, garlic, mushrooms, and bell peppers. Serve over linguine or pasta of choice for a hearty meal. You will need a very large heavy, deep skillet with a lid (or a large Dutch oven) for this recipe. Recipe may be halved. You may also wish to try this with beef or pork.
